Well, I understand your pain, girl! That’s why this month’s “What’s On The Menu” post is all about those easy-to-eat fall flavors!

1. Baked Apple Cider Donuts

I tried my first Apple Cider Donuts at Trader Joe’s last month and I was more than pleasantly surprised!
I like the idea of baking my own fall treats because it feels like made-from-scratch food is more “fall like” than store-bought, doesn’t it? It’s the vibes.
(Since I don’t have a donut pan, I’ll be trying this recipe via donut holes. Also am planning to use 1:1 Bob Red Mill’s Gluten Free Flour.)

2. Sweet Potato, Apple, Turmeric Soup

Just saying the name of this Slow Cooker Soup makes me feel like a cozy fall breeze with sunlight filtering through the fall foliage.
I pinned this recipe last year and it is delicious! Just a heads up — this is the kind of recipe that should be made to taste. Feel free to add more garlic, more salt, substitute chicken broth, substitute butter or ghee, or add some fresh sage!

3. Soft & Chewy Pumpkin Oatmeal Cookies

I love pumpkin flavors. I love pumpkin pie, I love pumpkin bars, I love pumpkin spice latte’s, I love pumpkin curry, I love pumpkin!!!
I didn’t used to. It must be a quirk that happens to you once you’re in your 30’s and happily settle down into a homebody lifestyle.
These look delicious, and I love that it uses real pumpkin. Pumpkin is Bodie Pup’s favorite super food, so, technically, these are very nutritious cookies!

4. Thai Pumpkin Red Curry

I’m not sure where I found the original idea to make homemade Thai Red Curry using 1 bottle of Trader Joe’s Thai Red Curry Sauce and 1 can of Trader Joe’s Full Fat Coconut Milk, but I’m 100% going with it!
Basically, you sauté the ginger and garlic, add the veggies, add the protein of your choice (I recommend Chicken or Tofu), and dump in the Curry Sauce and Coconut Milk!
FYI: If you go with my #makeiteasy trick to this recipe, you won’t need the fish sauce, and the broth would only be used to thin it out as needed.
To make it Fully Fall Flavored — add a can of Trader Joe’s pumpkin purée! (Duh)

5. Pumpkin Spice Oat Milk Latte

On my “Run Away With Me” road trip to Iowa and back, I tried some local cuisine — Caribou Coffee — and fell in love with their Pumpkin Spice Oat Milk Latte!
Y’all know I love my Whole Milk Latte’s, but the Oat Milk added that perfect earthy finish to each sip — I wanted to cry! It was so good! It tasted like Pumpkin Pie.
The recipe I’ve attached is for real pumpkin spice syrup. Add it to your cup before pouring in the hot espresso or hot coffee, then top with frothed Oat Milk. It’s ok, you can thank me later!
